It's a...

Sorry that this post is going to be quick and lame but I thought I'd just quickly say that we're having a....

BOY!!

at first I was super sad because I wanted a girl so badly, but now I'm really glad it's a boy. I like the whole older brother thing and I'm getting more excited now that I've got some super cute clothes. I'm mostly excited to be half way done with the pregnancy and be able to eat more normally. I plumped up at Christmas so hopefully that means little baby boy is getting bigger and not just me! :) We had an ultrasound on Monday and he looks soooo cute. The tech said, "Yep he's still a boy!" so I guess it's official. Sorry for all the people who guess girl, that was my original hope too.
I hope you all had a wonderful Christmas and enjoy your New Year's. David and I are off on a cruise to Jamaica and Grand Cayman for our New Year's and can NOT wait. Hello sun...

Happy 2nd!


Yesterday was our two year anniversary. I cant believe we've been married that long already and no longer have to be labeled "newly weds." David surprised me with tickets to the Utah Jazz game because we had been talking about going FOREVER and reservations to The New Yorker in SLC. The New Yorker was a very swanky, expensive restaurant (you know the kind where you actually have to dress up and they take your coat at the door?) and the food was to die for. Dressing up for me meant getting a preggo dress from Motherhood Maternity last minute yesterday because I discovered that I no longer can squeeze into my skirts. I've gotten big this last week. We had fun trying to eat correctly and not make a fool of ourselves. I had the most amazing steak I have ever had in my life and David had roasted pheasant (sounds weird but I assure you it was awesome....especially nestled over basil mashed potatoes. You'd have to try to to truly understand) . Both were out-of-this world amazing. My dinner also came with creme brulee with fresh fruit and a piroette on top. It was DELICIOUS. Normally I despise creme brulee but this one was awesome. I had my eye on the chocolate mouse sundae but knew better than to eat chocolate (it makes me brutally ill now that I'm preggo....a huge CROCK if you ask me) so I"m glad we went for it. I loved it. We practically had to be wheeled out of the restaurant afterwards because we ate every last thing on the plate. Side note: the bathrooms were so crazy nice too. I stayed in there forever and kept using the creamy, yummy-smelling lotion. I made David go use the restroom just so he could see for himself. haha We stole a bunch of match books when they went to get out coats because we wanted to get our moneys worth. So embarrasssing and white trash, but what can you do??

The game was super fun too. I forgot how much I love going to real games. We were up in the nosebleeds and tried to sneak down at half time. We had it all planned out which seats we were going to steal, but somone miscalculated by one row because the people with the actual tickets came back and made up move. Back up to the nosebleeds for us where nobody checks your tickets. Oh well, it was a great and FUN evening. Happy 2nd sweetie!

It's a....

I have a secret.
I snuck down to the ole Ultrasound stop last night because I absolutely couldn't wait another second to find out what we're having. The second my doctor told me last month that for $25 extra I could find out at 16 weeks, I knew David and I wouldn't last until 20 weeks to know what we're having. I'm very glad I married someone who is as impatient about these things (and everything for that matter) as I am. It would be very inconvenient if he wanted to wait and made me do the same. If that had been the case, I probably still would have snuck out one night to find out and just not mentioned it to him. I am under STRICT STRICT instructions not to tell a living soul what the cutie is until Christmas, but now is the time to place your predictions. Trust me, I bursting at the seams to tell EVERYONE, including random strangers on the street, but I agreed because it was the only way David would let us find out. I would rather keep a secret than not know. David's vote was a boy, mine was a girl. Who is right?? Please guess in the comments area. Any name suggestions are also welcome. We are pretty set in our ways about names, but if a suggestion was good enough, we might be persuaded to reconsider our options. :)

Little lime update


SO, since so many people asked the same questions about the pregnancy, I'll just give you all a little update. First of all, as you can see from the little baby ticker, I'm 12.5 weeks along and the baby is doing GREAT. We had an ultrasound and saw the little bean and HER blinking heartbeat and heard HER heartbeat again last week. I'm starting to relax about it and feel confident that everything will work out this time. Freaking out is not going to help I decided.

Secondly, I've been DEATHLY sick since week 6 on the dot. Hello 24-hour nausea and barfing. Whoever said it was "morning" sickness lied. I took off like 2 weeks straight from work because I literally couldn't get out of bed/stop throwing up/ sit up straight without losing breakfast, lunch, and dinner. For Conference weekend, we went over to Melissa and Brandon's house and I threw up all over our car as David drove down the freeway. That's after he already pulled over 3 times for me to stop and do my business. Needless to say, I don't get in the car now unless I absolutely need to. Basically the couch is my new BFF except for the 5 hours a day I'm forced to be a work.

I've had a few mental breakdowns from the nonstop nausea...poor David. Finally, at week ten I broke down and went to the doc for medication because I coudn't take it another second. She told me that the medication isn't risky and I was at way more risk from being hospitalized for dehydration. The whole appointment was so embarrassing because I literally bawled my eyes out the entire time. She just kept handing me more and more kleenex and I just keep crying. I was so embarrassed but thrilled when she let me get the miracle medication. She prescribed me 2 different kinds of meds--one that makes you really drowsy and one that doesn't. When I went to Walgreens to pick them up, I found out that the drowsy ones were covered by insurance and the nondrowsy ones weren't (and they cost $10 a PILL!!!) I tried the drowsy ones and they were awful. It knocked me out for 5-6 hours straight and then I couldn't wake up from this awful daze/hallucination. I haven't touched them again since. It scared me to death.

I finally decided to bite the bullet and try the other ones so I forked over $100 for 10 pills to see if they worked. I took one pill and within 15 minutes: VOILA I'm fixed. I have never felt so good. I only allowed myself to have one a day (during work hours) because of the extreme price. I was SO mad when I found out last week that Costco sells them for $1.00 each from my doctor. Why she failed to mention that in the first place make me SO mad. $250 BIG ONES down the drain and I could have only spent $30. Oh well, live and learn. Now that they're cheaper, I get 2 a day. :)

The baby is due May 15th and we get to find out if it's a GIRL or boy right before Christmas and are so excited. Im dying to have a girl but we'll be happy with just a healthy baby. I think David secretly wants a boy but he thinks baby girls are cuter too. I'm restraining myself from buying anything pink until we find out. I still don't feel good by any stretch of the imagination, but at least I can control the barfing to once a day or less. I eat the same things every single day because I HATE 99% of food. It's embarrassing to admit that I eat an entire bag of potato chips by myself every other day. I don't really care though because they are the ONLY thing that consistently tastes good and doesn't make me sick. Besides I've lost 4 lbs so I'm not worried about it anyhow. I can NOT wait until I feel good all the way. If I'm one of the 10% that's sick all 9 months, someone will die. Anyhow, that's what's been going on in my world lately.

Costumes delivered

As promised, here are pics of our costumes for Halloween 2010. Let me just say, I think they are the best yet. I thought last year would be hard to out due, but this year's were much better...in my professional opinion. We had such a fun Halloween this year. David's mom and dad and sister, Cassie, came to visit us. We took them to the Haunted Forest Friday night and then costume bowling on Saturday night, along with going out to dinner all dressed up. David and I got some dirty looks from the older generations, but they just don't know what's cool. I don't care what they say, our costumes were tight! Hope you had a blast too!

A little Pumpkin


David and I had a blast carving pumpkins again this year. I didn't try anything too tricky this year, but David outdid himself this time. I guess he wanted a cool pumpkin after last year's one when I thought he just carved "shapes" into the pumpkin but in reality it was a funny face. Trust me, it looked like shapes NOT a face...I don't care what he tells you.

Costumes

Well, Halloween (one of my favorite holidays) is just around the corner and I'm SO excited. David and I finally got our costumes all together and are counting down the days until we get to sport them. You'll have to stay tuned to see what they are as there will be no hints until Halloween, but can I just say that they are SWEET?! We're planning on carving our cute pumpkins in a couple days and then David's family is coming out to celebrate with us for the actual holiday. A trip to the Haunted Forest and costume bowling is planned. What's not to love about dressing up and eating candy until you end up in a sugar coma? I hope everyone has something fun planned.
Did I mention yummy Halloween treats like pumpkin CHEESECAKE? Yum! I cant wait.

No pics

You've been warned early that this post will have ZERO pics (which I know is super lame) because my camera ran out of juice and I was, quite frankly, too lazy to plug it back in before we headed up to the Halliday cabin for the weekend. We had a GREAT weekend spending time with Melissa and Brandon and the cute boys. There's nothing quite like being away from civilization and enjoying the great outdoors. We had so much fun riding the paddle boat and four-wheelers, relaxing, and doing what we do best: EATING! I miss it already and cant' wait to go again next summer (assuming we get an invite, of course!). When David and I are rich and famous, we're getting a "little" cabin just like that. Hope your weekend was as fab-tab as ours.

Big M came and went too soon



David and I snuck away from the kiddies and went up to Big Sky country for a much needed, LONG weekend. We had a blast going to Billings, getting our beloved Grizzly steak, shooting guns, going to Virginia City, and just enjoying the great outdoors. Of course, it went by much too quickly but I'm just glad we FINALLY got to make it. I can't belive it's been 1 year and 9 months since we've been back. Pretty pathetic if you ask me. Next time we're for sure going to ride horses, go on a hike, and ride motorcycles. It was FREEZING when we wanted to do those activities so I guess we have something to look forward to. How was your Labor day?

WOW

I finished MockingJay and it was awesome. I'm happy, I'm sad, I'm depressed, and I'm in love. So many emotions for such a good book. I bawled my eyes out several times, but overall I can say that I'm happy how it ended. I'm happy that I can move on with my life again.

OBSESS MUCH?


So I'm a little embarrassed to admit this considering that this book will most likely become the next teen sensation (at which point I can NEVER admit that not only did I read them but couldn't get enough of them), but I'm OBSESSED with the Hunger Games series. Last night, Amy and I ventured to Barnes and Nobles to wait in line for the midnight release of Mockingjay. I couldn't wait another possible second to get my hands on the gem. We are so obsessed with Peeta and I even contemplated making "TEAM PEETA" shirts to show our support, but ran outta time. Needless to say, the activities weren't as cool as I thought they would be but we had a blast. It was just so fun to whine and complain about waiting and speculate about what will happen. I planned on staying awake all night and finishing it so that Amy couldn't beat me, but fell asleep after chapter 3 (not the book's fault; it's awesome, but I was just so tired). But I don't care what I have to do to finish it tonight, I'm gonna do it. Spoiler alert: THE BOOK IS FREAKING AWESOME!

The Close of Summer

Well, it's official...Summer is basically over and then it's back to school for David and back to the grind for me. We have had the best summer ever and have been able to sneak away several times. You would think that with all the fun things we did, I would have lots of new, cute posts but unfortunately summer also means a break from the old blog. David starts school again full-time one week from day (Not much of a break considering he's been going all summer too and just finished last week). I'm dreading it and mostly dreading doing 130 move-outs and 202 move-ins this weekend and on Monday. I will be glad though since move-ins mean I will be done with the leasing part of my job and get back to the maintaining part, which I like a LOT better. David and I are planning to go to Montana for Labor Day weekend and I can't wait. Only 4 more months until Christmas now, but who's counting.
Pathetic I know, but Christmas break is the next thing I look forward to once school starts. That and Haunted Forests in October and yummy turkey in November.

We're off to see our fam-dittle-ly over the weekend and a few days into next week and I can NOT wait. We leave her at 5:00 a.m. (gag me) tomorrow morning and get back on Tuesday. We're gonna spend some quality time with my side of the family at Nathan and Lindsey's house. We'll be playing golf, swimming, going to the fake beach, playing intense board games, blessing the newest addition to the family, and just having fun. So long, suckers! Chicago, here I come!

Better late than Never

Happy a few-days-late 4th of July. David and I have a fabulous weekend free of work (well Sunday and Monday that is!) filled with fireworks, BBQs, swimming, another painting project, a mini-bazaar thing, and just relaxing together. Here's to 2 years together! haha

Our friend, Tausha, had her birthday on the 2nd so during dinner, on a whim, a few of us decided to drive down to Evanston to buy the good illegal fireworks. The worker lady told us if we spent $100 combined we could get a free $40 big firework. Of course, after we looked around it was easy to spend the $100 bucks. We got some Roman Candles, firecrackers, bottle rockets, giant exploding fireworks like at the shows, and other random fun stuff. It was a blast launching them off with people in the parking lot (don't tell Management!! haha). We had to take the huge free $40 one to the Costco parking lot though because it was WAY too big and we didn't want to get a $500 fine. We already had the fire marshall constantly circling the block because he say our fireworks driving by. I have to say that my favorite fireworks were the Roman Candles. We would shoot them while someone ran in front. Sounds dangerous but was so fun and FUNNY! I love the 4th and I'm already sad it's over.

Finally, some Summer


David and I are headed here this weekend to enjoy a nice relaxing weekend with Melissa and Brandon and Co. I havent been to Bear Lake since I was a kid so I'm pumped to be going again. David and I had our first summer camping adventure last weekend up Diamond Fork Canyon and it was super fun. Sometimes I cant decide if I love or hate camping though. I love everything until the night-time comes and I'm freezing cold. Then the sun finally comes up and youre so excited for about a minute and then the tent is boiling hot. It will so be worth it to enjoy the outdoors and get away from Provo for a bit. Let's pray nobody burns the building down when we're gone (although I wouldn't be surprised either way). I'm a little ashamed to be camping next to Melissa though because they do NOT know how to rough it. They bought a freakin tent heater for crying out loud! I complain, but I'm secretly planning on sneaking in their 10 PERSON tent at night, kicking Brandon out to go stay in our tent with David, and happily following a sleep all warm and cozy and snuggling with cute, smiley Cory Baby. A Reeses smore has my name on it and I can't wait till tomorrow! Hope you're doing something fun this weekend too!

Made my day...

Yesterday was one of THOSE days. I mean, it wasn't that bad but I it just wasn't that fun either. I was busy all day at work so I didn't even get to look at blogs or watch even ONE episode on hulu...can you believe it? haha I came home to this yesterday and it just made my day...

What did you do this weekend?

So, I have a little addiction and it's name is KSL classifieds. I spend hours a week on that precious gem of a website looking for little "projects" for me and David to work on. For example, I have been looking for the just-right dresser to buy on the cheap and then paint black. The right one fell into my lap on Friday so I borrowed Melissa's SUV and headed to Holladay before it could be snatched from underneath my grasp. It turned out to be just what I wanted and MORE. David and I sanded it down and primed it twice on Friday night (and let me just remind you that we didnt even get started on it until around 9:30 pm) and then painted it on Saturday--two coats black paint, one coat black spray paint, and finally a polyerthane sealent. It looks so BEAUTIFUL and is happily holding our clothes now in the bedroom. I can NOT wait to start painting the TV stand we bought awhile back on KSL and have been wanting to paint but it has been snowing/raining forever. I wonder what we'll find next!

Annoying Habits

I don't know why, but I've been thinking about annoying habits and mannerisms that I have that I cant seem to convince myself to fix. For example, do any of you have the same problems?...
1-avoiding using the bathroom even when you REALLY have to go because you know that there is only a little bit of TP left on the roll and you REALLY REALLY don't want to have to change it, especially since whoever changes it seems to be forever stuck with the job. For whatever reason, who ever starts the roll always ends up ending the roll too because the TP companies apparently make the roll to work out like that. I always wait it out until David uses it unless I'm extremely desperate
2)Leaving the smallest amount of water left in the water filter because you also dont want to put new water in. And if your spouse/roommate conplains, you can always say "hey, there was water in it the last time I used it." No need to admit that there was only maybe a half a glasses worth in it. David's favorite is leaving an entire empty juics pitcher in the fridge. When I question him about it, he always informs me that he did it on purpose so that the next time he makes juice it will be cold. I can't tell if he's being serious or not.

3)Leaving a pile of shoes in the front room until you cant take it anymore. I've always had a problem putting my shoes away into their proper place in the shoe bin in my closet (As Autumn can attest to since she always put them grudgingly away for me because she couldnt stand it) and the problem is that I married someone who is almost identical to me. We both string our shoes everywhere until one of us gets to the breaking point and announces "Ok, the shoe limit in the living room has been met. 5 minute shoe clean-up NOW!"
4)Changing into PJs or sweatpants the SECOND you get home from work or wherever at night. Sometimes I swear I start unbuttoning my pants walking to the apartment so that I can get them off ASAP. I can NOT stand wearing jeans or pants or a skirt all day. I'm always a little sad when we decide to go somewhere at night because that means putting the said jeans back on. David can NOT understand why I change ever night. He always wears his clothes until bedtime....even on Sundays. Sundays is not even close to a jeans day option! I go to church and get outta the skirt as quickly as I can once we get home. I especially love my fuzzy black ones :)

5)Singing along with EVERY commercial I know the words to. My favorite ones include JG Wentworth's "I have a structured settlement and I need Cash now", Freecreditreport.com (which I was extremely disappointed in because they recently changed it), the San Diego commercial, and SNL's "Hubble Gotchu!" David used to laugh at me for doing it all the time, now he tries to out-sing me when they come on. "IT'S MY MONEY AND I NEED IT NOW!" haha

I know that I have many more than this, but these are a few that come to mind. How about you? What do you do that is annoying?

HAPPY BIRTHDAY DAVID



Happy birthday "Mr. 25"! Today is David's big bad 25th birthday. He was super impatient so he already opened all his presents and got his cake, but we're going out to dinner tonight with Melissa and Brandon and Co. at Bucco di Bepo. And we were sure to get up early for his free Grand Slam breakfast at Dennys. I signed him up for every free offer in town (like I did for my birthday as well) so he will be enjoying free Coldstone, free DQ, free Benihanas, and free Tucanos. I just love getting free stuff and going outta my way to get it. Thanks everyone for helping us celebrate his big day. Happy birthday, my birthday boy!

94 degrees has never felt so good

Happy fake-me-out Springtime. So I officially hate Utah. I kid you not, we had freakin snow last week. That's right, I said SNOW! And now today (and yesterday) I wake up to gallons of rain falling. I have had about as much "April showers" as I can take, especially considering it's mid-May now. Anyhow, despite the crappy weather and lack of sunshine, David and I opened the pool here and have been swimming ourselves silly. Now not all of you out there may realize that the max temperature that a pool is allowed to legally be set at is 85 degrees (and trust me, we keep it set right at 85 because of the cold weather). Well, a few days ago the igniter for the pool broke so we had to replace it with a new shiny one and needless to say, the new one is apparently much more efficient then the 20 year old one so the old setting for 85 degress is apparently the new setting for 94+ degrees! We were happily playing the new Super Mario Bros game when one of the tenants tracked us down and said "Umm...the pool is like really warm....I mean super hot. It feels like the same temperature as the hot tub." Concerned, we raced down the stairs and take the temp of the pool and it turns out she was right. We measured it at 94 degrees and it was still going up. Taking full advantage of the now giant hot tub, we turned off the heater and jumped in. And let me just say 94 degrees has never felt so good! I told David to keep it at this temperature but apparently it's not safe or something lame like that. All I can say is that I'm glad that Mr. City Pool Inspector didn't decide to make an unwelcome visit. It's back down to 85 degrees and now it feels so cold.

False Alarm

I lied when I said that it's finally Spring around here. Granted, David and I did spend painstakenly long hours reopening the nastily dirty pool and spruncing up the place around here only to wake up to snow the last two days. Tomorrow's forcast: more snow. That's it, I've had it. We're moving to the beach tomorrow. I can't take Utah's lousy weather anymore. May is on Saturday for crying out loud.

HP is being released early...wait what?!


In case you were led astray too into believing that Harry Potter 7: Part 1 was coming out in June instead of November by a tenant who INSISTED that it was true, DO NOT BE FOOLED. I checked online because I'm lame and have no life and am stuck on the computer for 5 hours a day entering new tenants into the system and paying a bazillion bills and found out that she was indeed wrong. And Yes! I'm depressed now. That tiny little gleam of hope has been crushed. Well, on the bright side, I guess David has an extra 5 months to finish/START all the HP books that I bought him for our anniversary. Looks like that was a good buy afterall....I mean they do look nice collecting dust on our bookshelf. Next time I'm sticking to a sure thing: a new skateboard.

SPRING FINALLY

It's officially getting warm in our neck of the woods and not a moment too soon! David is opening the complex pool next week and I'm pretty excited...mostly to get people off my backs with their pestering "When will the pool be open? The place across the street opened theirs last week." My normal response is "Feel free to go swim across the street then!" What children (or students in our case) forget to remember is that we will most likely have another snow or extremely cold day before it's officially warm and safe to have it open. Whatever, if the pipes bust I"ll just put it their bill! Other than the normal idiocy I deal with most days, I"m in a very good mood because it's warm out. I'm dreaming of swimming in the ocean and relaxing on the beach. I still can't remember why I live in Utah. Oh yeah, David is a forever student! One can dream...

Happy Easter

Hoppy Easter! This year our Easter was pretty low-key with General Conference but it was still fun. I am drowning in chocolate and candy! If anyone wants some PLEASE OH PLEASE come to my house first. I got a giant box from my mom and dad, followed by an overflowing basket from David (I mean the E.B.), and then of course I got him a basket too. Not to mention we still had leftover candy/treats from my birthday. Good thing we're joining the gym tonight or it could be a scary sight in a couple weeks. David and I did the whole hide-baskets thing which was super fun. He made mine really easy this year because last year it took me like an hour to find and this year I made his really hard to find because I made it too easy last year. Needless to say, I was enjoying chomping away at my candy while he was getting frustrated. Like I said, it was a great Easter! :)
I'm thankful for holiday that are focused on Christ. I am so thankful for Him and the gospel and the resurrection that allows us all to return back to our Father in heaven. I am so thankful for family and friends and the blessings we enjoy. Happy Easter!

Festival of Colors

David and I and our friends from Salt Lake went to the Festival of Colors on Saturday at some Hindu Temple in Spanish Fork. I've been meaning to go for years but never really got around to going for some reason. Apparently it's a pretty popular event because we left like an hour and fifteen minutes early and ended up getting there 30 minutes late. And let me just remind you that Spanish Fork is literally the next town over! We saw a ton of people walking so we decided to abandon ship and walk too. What we didn't realize is that when we left our car we were still like MILES away from the temple. Oh well, I guess we got our exercise in.
When we finally arrived at the temple, we saw tons of colors being thrown everywhere and on everyone. It was so fun. David and I were determined to get colored as much as possible. We quickly got in line to purchase our own bags of pretty colors but right before we got to the front the lady announced "We're out of colors. Now leave!" Sad day. If we would have walked literally 5 minutes faster we could have been apart of the cool crowd with colors. I'm telling you, David is horribly unlucky! If I would have went by myself I would have been early and never had to deal with traffic. Every since we got married, he's been sucking the luck right outta me. I used to be one of the luckiest people ever. :(


We did end up getting as much color as we had hoped on us though. We just got in the crowd and everyone started throwing the "stuff" up in the air at once. If I had asthma, I would have died. We were breathing that stuff into our lungs like crazy and it made us cough so badly. What people won't do for "culture." Hey, it's hard to come by in Utah, especially Utah county. Birthday, Skiing, and more

I've been such a blogger slacker lately and for that I apologize. I have actually been really busy at work lately...I know, I'm suprised too. Today was the first day that I actually looked at other people's blogs. Since I get so antsy when other people won't blog, I decided that I better do a little update of what we've been up to lately. Now people, GO BLOG TOO! I need some entertainment and pics of your cute children.

1-My birthday was completely AWESOME! David surprised me with a 3 day/night trip to Vegas that included staying at the Venetian in a super-duper nice SUITE. Teri was so nice to give me that as a present. She's the best! The hotel was so nice and the bed was so comfy. We need that bed because coming home to ours was not fun. David also got me tickets to Mystere' by Cirque Du Soleil, which I can't even begin to describe. It was so fabulous and I just want to see it again so badly. We had such a fun time and it was nice to see Teri and Cassie. Besides having to turn 25 it was wonderful.
2-Amy had her baby. She is so dang adorable and chubby and cute. I want to die when I see her. All I ever want to do is hold her. I'm afraid of going over too much in fear that I might overstay my welcome. Her cheeks are so chubby and cute. I love her girls. Kate's a riot now too and is talking up a storm. I hope I have as cute of kids as she has. I was hoping she would have Alli on my bday but she came on the 10th. What a sweetheart.

3-David and I finally went skiing/snowboarding. I got David a pass to Snowbird for Christmas and we just barely got around to using it. We decided that since it's like 60 degrees every day now we better use it soon or it would be too late. David snowboarded and I skiied and it was great. We were both fried a little crispy since we forgot sunscreen, but other than that it was a perfect day. Utah really does have the best snow on earth.

4-This job is stressing me out big time. Ok, so it's not that bad but I haven't been sleeping much because all I do is have nightmares of not being able to sell all the contracts. We have to sell 30 a week (yeah, that's 5 a DAY people!) to make our sales goals. That makes for a lot of sleepless nights. I will be so happy when it is over. Come on chillins' you know you want to live here. David and I are cool cats. haha

Happy Love day!

David and I had a great Valentine's day. We went up to Salt Lake City for a nice dinner, "Valentines Day" movie, and then stayed the night at the Radisson in downtown. It was the perfect day and made me feel so much better. I think it was the first time I had been outside the apartment in 2 weeks. I hope everyone had a beautiful day with their honey!

We just want to say THANK YOU also for all the kind words and advice, meals, flowers, emails, visits, and strawberry chocolate bouquet that made us feel so loved. We truly appreciate all the niceness that everyone showed towards us during this time. We've been super sad but are finally feeling a little better. I had surgery last Wednesday and everything went great. My mom was able to come down and be with me and help me, which was so helpful and nice. I am so thankful to have such a loving mom who will drop anything to be with us. I'm not sore anymore and am feeling a lot happier. We love you all. Thank you again for all that you did for us. We won't forget it!

MAKE THIS NOW!

Ok, so David and I had Amy and Nathan over for dinner and I attempted a new recipe. I have been wanting a good pasta recipe FOREVER. I looked online forever for something suitable but ended up on the Olive Garden website instead to look at their beloved food that I never get. Well, low and behold they put some of their delicious dishes online for you to make at home. Talk about YUM! (To be honest, I would rather have THEM make it for ME, but I'm just happy to get to eat it!) I made Chicken Castellina and you must too RIGHT NOW! No serioulsy, it was delicious. Go get the ingredients. I am making my most favorite dish of theirs, Tuscan Garlic chicken, tomorrow and I expect deliciousness again. Here is the recipe...


Chicken Castellina
Sauce
1/4 cup diced bacon
6 T. butter (I never said it was remotely healthy)
1 tsp fresh chopped garlic
1/4 cup sundried tomatoes, chopped
1.5 cups heavy whipping cream (once again very fattening but scrumptious)
1.5 cups milk
1 0z cornstarch
1/4 cup grated fresh parmesan cheese
1/2 cup smoked gouda cheese, chopped
1/4 tsp salt
1 T. fresh rosemary (I omitted this because I couldnt find it and dont care about it)
8.5 oz artichokes, drained
1/4 tsp pepper
1/4 cup chopped mushrooms


pasta of your choice


Chicken
1.5 lbs chicken breasts, cut in cubes
3/4 c. flour
1/2 tsp salt
1/4 tsp pepper
3 T. olive oil
1/4 c. white wine (you dont have to use this or can use chicken broth instead)


Saute bacon in large pot over medium/high heat until crisp and golden brown. Reduce heat, add butter, and let melt. Add garlic and sundried tomatoes and cook approximately 1 minute (stirring frequently); do not brown.

Whisk in together whipping cream, milk, and cornstarch together. Raise heat to medium/high heat. Add parmesan and gouda cheeses. Once cheese melts, stir in remaing sauce ingredients and bring to a boil; stirring continuously.

Remove from heat and let stand uncovered.

Chicken
Mix flour, salt, and pepper together and coat chicken in it. Shake off excess.
Heat oil in pan and brown chicken thoroughly on both sides; until juices run clear. Add wine (if wanted) to chicken pan and toss until evaporated. Add chicken to sauce and let heat up again.
Place on pasta and ENJOY! Yum Yum in my tum tum.

Time to get back to real Life








We had a fabulous Christmas break filled with lazing around, spending time with family, eating, treats, parties, David's 50th birthday party, fun at Six flags, opening presents, getting lost in L.A., playing my new Original Nintendo system (Super Mario 3 baby) that David got me, playing games, sleeping in, being WARM, riding bikes at the beach,and just enjoying the time off. We were able to get a week and a half off of work and it was just what the doctor ordered. David is now back in school and I"m back to work but we're loving 2010 already. I hope everyone had a great break.
